Thoughts have been drifting through my cob-web brain over the last few months.........................
The biggest issue that will soon face Mangalitza breeders is what to do with stock that we can not sell? So far I have been really lucky, BUT..... one day I may have more mangalitza piggies than I can cope with!!! Both My sows are back in pig and I have a red sow on order, I already have an orderbook for the next litters, 6 Girls and 2 boys. But I still have 3 boy from the last litter who will go in the freezer if we can not sell them.
The issue will be what to do with any surpless pigs, we can only eat so much pork ourselves, we are going to make some Parma style hams and panchetta etc. As I have not yet tasted the Mangalitza myself I am reluctant to sell to people who buy our traditional pork, if they dont like it I could loose custom, (and we dont have enough to loose!). I am however prepared to offer a small free sample to friends and family, hopefully then they will buy mangalitza.
Anyway I'm rattling and losing the point The point I was, my thinking is.... If we form an informal breeders club, our meetings could be held over email or a messenger service. We could promote Mangalitza products, and use it as a way to supply demand. For example I may have 3 pigs for slaughter from the last litter, If i found an outlet for the meat then it will be another 12 months before I have any pigs ready for slaughter again, But someone else may be able to sent a few porkers. The hungarians are supplying spain see text from Mangalicia.................
By now the Spanish owner of the Olmos & Toth Ltd. is willing to take over 50-60 thousand mangalica swines (pig, hog). This number can be multiplied depending on the market, with special regard to the join of the country to the European Union and the increase of the Hungarian living standard.
We are never going to reach these numbers, but if we can find a restaurant chain that would put mangalitsa on the menu, as a consortium or co-op we could supply the demand that individual breeders can not.
